• Valentine’s Day Surprise Cake

I got a couple requests on my instagram to share the recipe I used for the Valentine’s Day heart surprise cake I baked a couple days ago, so I thought I’d share it here, on my poor neglected blog. If you haven’t seen one before, a surprise cake is a cake that reveals a shape, or maybe an unusual filling, baked inside the cake when you cut a slice. I’d never baked a cake like this before, so honestly… I just used box mixes to create this! I think sometimes it’s just better to use a box mix so you know what to expect, both in terms of cake texture…

  • Summer 2018 FabFitFun Review

So, I got my first FabFitFun box in the mail a looong while ago, and now I’ve had a chance to actually try everything. If you haven’t heard of FabFitFun (have you been living under a rock!?), it’s a quarterly lifestyle subscription box with beauty, fitness and wellness related items. This was my first box and it was full of great items. Just a warning, if you plan to get the Summer 2018 box or Summer 2018 editor’s box, and want the items to be a surprise, this post does contain spoilers! (I mean, c’mon, though — it’s been out for a couple months!) Otherwise, read on for a review of…

  • What’s New: May 2018 Recap

Thought I’d try my hand at a monthly recap since so much has happened, and the days seem to be flying by. I mean, it’s June already! Half the year is gone! In May, Andrew’s mom moved to California, my brother passed his driver’s test (watch out, drivers of New York!) and we did some hiking and exploring locally. You could also find me… Eating… Lots of home baked goodies (especially since I have a new shortcake recipe), tikka masala, bubble tea, sushi, and a lot of junk food. We’ve been terrible about eating at home this month. Buying… new furniture! We spent this month making our apartment a bit…

  • Classic Strawberry Shortcake

Happy Monday! Can you believe it’s June already? It feels like spring is flying by, and I’m so ready for summer! We’re grilling and BBQing and, of course, baking, like it’s 75 and sunny (instead of 50 and rainy — get it together, Seattle!), so today I wanted to share a fantastic summer-y recipe we baked up last week. I looked at quite a few strawberry shortcake recipes online and then put this together. (Andrew insists we consult Alton Brown whenever possible before I start tinkering, lol.) Strawberry shortcake is such a great summer dessert. Fresh strawberries and cream top a shortcake biscuit in this classic recipe. And it’s so easy…

  • Beauty Trash: Spring Empties Review

I think there’s something so satisfying about finishing up a product. Having a bunch of empties feels kinda like an accomplishment, especially if the product has lasted forever. I’ve used up a bunch of products recently, plus, I love a good empties review because I’m nosy, so I thought I’d do a little review of everything I’ve finished. I’ve had a stockpile of samples to use up since I cancelled my ipsy subscription last fall, and I’m finally getting through them. There are some drugstore and and some high-end products, things I loved and things I did not love, so this empties review is a pretty mixed bag. With eleven items,…

  • Classic Striped Sundress

Happy Memorial Day weekend, everyone! Aren’t three-day weekends just the best? Andrew and I  have split our time between getting some projects done, enjoying some time to relax, and getting outside and exploring Washington. And the weather’s so nice, I finally got a chance to wear this lovely blue and white striped dress I got when my mom and brother visited us back in the beginning of April. My mom has great taste and a classic sense of style, so all credit for picking this dress out goes to her, of course. It’s sleeveless, so a bit outside my comfort zone, usually. I grabbed a denim jacket from Old Navy…

  • Vanilla cupcakes with vanilla frosting and red, green or blue sprinkles, decorated with Star Wars-themed toppers

Star Wars Cupcakes and Buttercream Frosting

May the Fourth be with you! Haha, I know, so corny, but it’s May 4th, Star Wars Day! In honor of the occasion, I threw together some vanilla cupcakes, topped them with an easy vanilla buttercream frosting and dressed them up with some red, green and blue sprinkles. I’ve been hanging on to this adorable Williams Sonoma Star Wars Rebel Alliance Cupcake decorating kit for a while. I’ve used a few of the decorations to dress up some cupcakes for my boyfriend in the past, but I rediscovered them last week as I was cleaning out the storage closet — right in time for Star Wars Day! I actually snagged these…

  • Visiting the Skagit Valley Tulip Festival

Experiencing spring for the first time in the Pacific Northwest has been amazing. There are flowers everywhere! And I’m so glad that Andrew and I got  a chance to visit the tulip fields before the end of the Skagit Valley Tulip Festival this year. It only runs through the month of April (and will run April 1 to April 30 in 2019, too) so we stopped by on the last weekend. I looooove flowers, so taking in the view of so many gorgeous blooms at once was awesome. The tulips are the crops of RoozenGaarde (aka Washington Bulb Co., Inc.) and Tulip Town. Both companies have displays of tulips throughout the…

  • Welcome to Half-Baked Bettie!

Thanks for visiting Half-Baked Bettie! I’m Elizabeth. I’m a freelance editor and mama to three adorable fur babies. I currently live in Seattle. I have a soft-spot for handmade gifts, floral prints, and everything autumn or Halloween related. I’m an avid reader who can’t resist a good memoir or murder mystery, and I still love YA fiction. I love trying out new hobbies, like gardening or learning to speak French, and I’m currently working on my  first quilt! During the day, I’m a freelance editor. The rest of the time, I’m just a gal trying to figure herself out. This blog is where I plan to share the latest…
